Flan Caramel with Banana sponge cake

Who doesn’t like flan as dessert while eating after it is cooked from the oven? Determining the best flan dessert ultimately comes down to personal preference. However, the classic caramel flan is widely considered to be one of the most delicious and popular options. Combining creamy custard and rich caramel sauce creates a perfect balance of flavours. Additionally, variations such as coconut or chocolate flan can offer unique twists on the traditional recipe, appealing to different tastes. Ultimately, the best flan dessert is the one that satisfies your individual cravings and leaves you wanting more.

Flan Caramel with the banana sponge

This is only my invention that I can do with the 3 over-riped bananas I have. so I starting to make the flan. Below is how to do it.

  • To make flan caramel, you will need the following ingredients:-
  • 1 cup granulated sugar-
  • 1/4 cup water
  • Here are the steps to make flan caramel:
    1. In a small saucepan, combine the granulated sugar and water.
    2. Place the saucepan over medium heat and bring the mixture to a boil.
    3. Let the mixture simmer for about 8-10 minutes, or until it turns into a deep amber colour.
    4. Remove the saucepan from the heat and carefully pour the caramel into individual ramekins or a larger flan mold, swirling it around to coat the bottom evenly.
    5. Set aside the caramel and allow it to cool and harden.
  • Now that you have made the caramel, you can proceed to make the flan.
  • 4 large eggs-
  • 1 can (375 ml) sweetened condensed milk- you can substitute with coconut milk in the same amount.
  • 1 cup whole milk-
  • 1 teaspoon vanilla extract here are the steps to make flan custard:
    1. In a large mixing bowl, whisk the eggs until well beaten.
    2. Add the sweetened condensed milk, whole milk, and vanilla extract to the bowl. Whisk until all the ingredients are well combined.
    3. Strain the custard mixture through a fine-mesh sieve to remove any lumps.
    4. Pour the custard mixture into the caramel-coated ramekins or flan mold.
  • How to make banana sponge and the ingredient
  • 3 riped bananas (300gr) messed
  • 1/4 sugar, 1/4 milk,
  • 1 cup all-purpose flour,
  • 1 tsp baking powder,
  • 1 tsp vanilla,
  • 1/2 salt,
  • 1/4 oil
  • 4 yolks.
  • Add 4 yolks, sugar and milk until the sugar dissolved. Add the rest of the ingredients and mix till all combine and add mashed bananas. Stir it till its becomes thick and smooth.
  • In a clean bowl whisk the white eggs and cream of tartar till they stiff peak. Gradually mix the white eggs into the banana mix with a spatula bit by bit till all combine. pouring into the flan mix.
    • HOW TO COOK IN THE OVEN
  • To use a bain-marie, follow these steps:
  • Preheat your oven to the recommended temperature for your recipe.
  • Place your filled ramekins or baking dish containing the dessert into a larger baking dish.
  • Pour hot water into the larger baking dish, being careful not to splash water into the dessert. The water should reach about halfway up the sides of the ramekins or baking dish.
  • Carefully transfer the baking dish with the dessert and water into the preheated oven.
  • Bake for 60 minutes at 180C, keeping in mind that the baking time may be longer when using a water bath.
  • When the dessert is cooked, carefully remove the baking dish from the oven and the water bath from the larger baking dish.
  • Let the dessert cool to room temperature before refrigerating or serving.
  • Using a bain-marie helps to create a gentle and even heat distribution, preventing the dessert from overcooking or cracking. It is especially useful for delicate desserts that can easily curdle or become grainy if exposed to high temperatures.
