What is kumquat or cumquat

It’s from the citrus family but is very tiny than a normal orange. Kumquat is a small, oval-shaped citrus fruit that belongs to the genus *Fortunella*. It is known for its unique characteristics, notably its edible skin and tart flavour. Here are some key points about kumquats:

Characteristics:

– *Size and Shape*: Kumquats are typically about the size of an olive, ranging from 1 to 2 inches in length. They are usually oval or round.

– *Skin*: The skin is thin, orange to yellow in colour, and sweet, which contrasts with the tartness of the flesh inside.

– *Flesh*: The flesh contains several seeds, and the taste is tangy, making it distinct from other citrus fruits. Kumquat trees are small and can be grown in pots or gardens, typically thriving in warm, subtropical, or tropical climates. They are relatively hardy and can withstand cooler temperatures compared to other citrus trees.

Making kumquat candy is a delightful way to enjoy this unique fruit and its benefits. Below is one way recipe to create sweet and tangy kumquat candy.

Ingredients

1 kg kumquats 2 cups sugar (plus extra for coating) 2 cups water (I used Sake – Japanese rice wine and a pinch of salt.

Instructions

Prepare the Kumquats: Rinse the Kumquats thoroughly under running water to remove any dirt or pesticides.- Cut the top of the kumquats in 4 quarters halfway through (to promote the seeds out by themselves when boiled). You can also slice them into thin rounds if you prefer. Blanch the Kumquats. Bring a pot of water to a boil and add the kumquats. Blanch them for about 2-3 minutes, then drain and rinse under cold water. This process helps to soften the kumquats and reduces bitterness. When it’s cool, add 2 cups of sugar and leave overnight. You’ll see the juice of the kumquat starting to combine with the sugar.

Make the Syrup

In a saucepan, pour the kumquat with all its juices. Stir until the sugar is dissolved. To the syrup and a pinch of salt (and vanilla extract if using).- Bring the mixture to a boil, then reduce the heat to a simmer. Allow it to simmer for about 30-45 minutes, stirring occasionally, until the kumquats become translucent and the syrup thickens.

Candy the Kumquats: Once the kumquats are translucent, remove them from the heat. You can leave them in the syrup to soak longer for more flavour.- Transfer the kumquats to a wire rack or parchment paper using a slotted spoon to cool and dry slightly. Allow them to sit for a few hours or overnight. Coat the Kumquats (Optional). Once the kumquats are dry, toss them in granulated sugar for an extra sweet coating. This step is optional but adds a nice texture.

Store the Candy

Store the kumquat candy in an airtight container at room temperature. They can last for several weeks.
