Creamy Salmon & Asparagus Pasta

A delightful dish featuring omega-3-rich salmon and fresh asparagus in a creamy sauce. This meal is both satisfying and beneficial for reducing inflammation.

Ingredients:

  • Salmon fillets
  • Asparagus spears
  • bocconcini
  • Whole-grain pasta
  • Brussel sproud (steam and split in 4)
  • Garlic, minced
  • Low-fat cream or Greek yogurt
  • Lemon zest and juice
  • Salt and pepper to taste

Instructions:

  1. Cook the pasta according to package instructions.
  2. In a pan, sauté garlic until fragrant. Add asparagus and cook until tender add Brussel sprouts that have been steamed,
  3. Add salmon pieces to the pan and cook until done.
  4. Stir in cream or Greek yogurt, lemon zest, and juice. Season with salt and pepper and last add the bocconcini.
  5. Combine the sauce with the drained pasta and serve warm.
