Ingredients:
- Salmon fillets
- Asparagus spears
- bocconcini
- Whole-grain pasta
- Brussel sproud (steam and split in 4)
- Garlic, minced
- Low-fat cream or Greek yogurt
- Lemon zest and juice
- Salt and pepper to taste
Instructions:
- Cook the pasta according to package instructions.
- In a pan, sauté garlic until fragrant. Add asparagus and cook until tender add Brussel sprouts that have been steamed,
- Add salmon pieces to the pan and cook until done.
- Stir in cream or Greek yogurt, lemon zest, and juice. Season with salt and pepper and last add the bocconcini.
- Combine the sauce with the drained pasta and serve warm.
