Cucumber, Tomato & Avocado Salad

A refreshing salad that’s quick to assemble and packed with nutrients.

Ingredients:

  • Cucumbers, sliced
  • Cherry tomatoes, halved
  • Feta cheese
  • Avocado, diced
  • Cos lettuce
  • Red onion, thinly sliced
  • 4 colour beans (In a can)
  • Fresh cilantro or parsley
  • Lemon juice
  • Olive oil
  • Salt and pepper to taste
  • Balsamic Vinegar (optional)

Methods:

  1. In a large bowl, combine cucumbers, tomatoes, avocado, and red onion.
  2. Drizzle with lemon juice and olive oil.
  3. Season with salt and pepper, and toss gently.
  4. Garnish with chopped cilantro or parsley before serving.
