A refreshing salad that’s quick to assemble and packed with nutrients.
Ingredients:
- Cucumbers, sliced
- Cherry tomatoes, halved
- Feta cheese
- Avocado, diced
- Cos lettuce
- Red onion, thinly sliced
- 4 colour beans (In a can)
- Fresh cilantro or parsley
- Lemon juice
- Olive oil
- Salt and pepper to taste
- Balsamic Vinegar (optional)
Methods:
- In a large bowl, combine cucumbers, tomatoes, avocado, and red onion.
- Drizzle with lemon juice and olive oil.
- Season with salt and pepper, and toss gently.
- Garnish with chopped cilantro or parsley before serving.
